last weekend, instead of baking, i went up to connecticut for the wedding of my best friend from high school. we were the girls that were virtually inseparable, and to some people i think we were just one person. we have stayed in touch but not been as close since after college due mainly to geography and work schedules, but when we get together it is always just like old times.

initially i was going to make these as creamsicle cupcakes, but since some of my health problems were acting up i would be delivering these cupcakes on monday rather than sunday (which is when i was baking) i figured buttercream icing would be better than fresh whipped cream icing, so i think they might be just orange cupcakes…. either way, they were delicious! the birthday girl is my friend liz, who was also celebrating having run her first half marathon–

my mom and stepdad are coming to visit from nashville tomorrow, so i went with a downhome southern confection! over the past few years there has been some buzz over tennessee t-cakes, which are said to have originated from the time of the civil war…a young woman lured her lover to marry her by serving him these little delights. my mom sent me a recipe she found a few months ago and i have been meaning to try it out.

banana whip from bent spoon in princeton, nj/ serialbaker.com

this saturday was a beautiful spring day– my kind of weather, 60 or so. i have been craving softserve recently, but i also had a hankering for the bent spoon so i split the difference and got a banana whip. for those of you that are not in jersey, the bent spoon has phenomenal artisan ice cream (similar to gelato) and sorbet from locally sourced ingredients; if you find yourself near princeton it is a must visit! for those of you who don’t know what banana whip is, you are seriously missing out! it is amazing how something so simple can be so delicious, but it is just frozen bananas put through a fancy food processor. i have made it at home in my regular food processor attachment of my blender and it wasn’t quite the same, but close enough. you can also make it with pretty much any frozen fruit… it is like soft serve sorbet. mmmmmmm!
