despite my general preference for family business instead of large chains, i have to admit that i am a starbucks fan. i am. and i am not ashamed. last year they came out with two treats that i was absolutely hooked on. im not kidding- hooked. one was the organic blueberry bar, the other was the baked berry stella. unfortunately, these were seasonal treats, as in come the end of a couple months it was bye-bye deliciousness.
this simply would not do! i needed my blueberry bars. i thought to myself that there were three things i could do: 1. whine about it. 2. try and somehow convince starbucks to bring these bad boys back 3. remember that i am a baker and make some myself.
they seemed easy enough– a layer of baked oat substance, slightly goey blueberry layer, all topped with an oat crumb topping. i could totally do that. so, together went my oats, brown sugar, and butter…. into a saucepan went the makings for jam, and voila! sooooo good. these usually disappear when i bring them in to work, and they even caused my mom, who is the nicest person i know, to not share (i had left a few for her, my step-dad and his brother).

I am a Starbucks fan, too. The Starbucks on Cedar Grove Lane is the best. Anyway, when you made these…. the Hammonton, NJ blueberries were chubby and plump from the recent rainfalls and most importantly fresh and scrumptious on their own. However, the blueberry bars you created highlighted the mouthwatering qualities of the fruit baked and they were a delightful treat… YUMMY. YUMMY.
