
since i was attempting zombie cupcakes for the birthday boy, i wanted to make something relatively easy as my general baking. everyone had such a rough week last week, i figured chocolate was a wonderful direction to go in. i had made these last winter as a birthday bake for one of the guys on my team and decided to try them again with some more variations.

i dont have too much to say about these, since i was pre-occupied making them in between steps for the cupcakes. the flavors i went with were: milk chocolate with chocolate sprinkles, or crushed peanuts; white chocolate with chocolate sprinkles, crushed peanuts, or rainbow non-pareils; i tried to make peanut butter ones but the peanut butter chips didnt melt right, and, well, it is sunday and i dont think candyland is open to get the good melts– and frankly i didn’t have time or feel like going hunting for them. i am sure i will be making buck-eyes soon, so i am not too worried that i didnt get to do peanut butter today [o:

Recipe:
Makes roughly 30 truffles, depending on how small/large you make them
1 batch of brownies
about a pound of chocolate, depending on how thick you like your coating
nuts or sprinkles to your liking
you can use whatever brownie recipe you like, i suggest something fudgey. let them cool 5-10 minutes, but no more…just cool enough to set a bit and not burn your hands
use a small cookie scoop or your hands to take out pieces and roll them into balls; it is okay if there are some edges sticking out, the chocolate will cover this
let them sit out for about 10 minutes to set in ball form. heat up your chocolate (you can use chips or bars if you do not have melts available) for about a minute. you will need to keep the chocolate moving or on a heating tray to prevent it from hardening, because of this, i did one type of chocolate at a time.
roll the brownie bites in the bowls of chocolate then either dip them in the sprinkles/nuts of your choice, or place them on wax paper and sprinkle on the toppings. variation: place a nut or a raisin inside the brownie before dipping in chocolate
place the brownie balls on a wax paper lined cookie sheet and place in freezer until hardened; if you will be serving them right away about half an hour should do the trick, if they will be sitting out longer, make sure they are good and solid. for presentation, i like to serve them in mini muffin papers, and if for a gift, i use a chocolates box.
