last week was my annual conference for work, which meant 7am-11pm or later every night… of course, i had committed to baking 3 dozen cupcakes for a bridal shower on saturday. what does this mean? i snuck out during the time i should have been getting ready for the awards dinner, quickly baked the cupcakes, went back, threw myself together, and then woke up early on saturday to make the icing. if i were a normal person, i would have stuck with one variety, but no, i couldn’t do that; i made: vanilla vanilla, chocolate vanilla, vanilla raspberry, chocolate raspberry, chocolate chocolate, chocolate peanut butter, and my favorite, vanilla lemon (which seemed to be a fan favorite as well!). i did keep it fairly simple though– for the vanilla was dorie’s perfect party cake, the chocolate was ree’s best chocolate cake ever, and the icing was magnolia’s vanilla with flavors added. i heard a rumor that i am wonder woman… it might be true!
every day is an opportunity to learn new things, and we are constantly faced with challenging situations that do not always work out the best. in the past week, i have learned many lessons… some easy, some hard… some that will have a big impact on my life, some that were comical. in the end though, at least there were cupcakes. and now, for your learnin’ pleasure, this week’s lessons:

no, there is nothing involving olives in these cookies, but they are a peace offering at work for a group that has been doing a whole lot for me, and i have inadvertently ruffled the feathers of. i won’t get into the situation, but it isn’t good, and cookies certainly won’t fix it, but baked goods are a good compliment to a thank you card in my humble opinion.

when you think of memorial day, the first though that pops into your head is most likely the barbecues and the unofficial start of summer… some of you may think of the parades… but hopefully everyone took a moment to reflect upon the brave men and women that have given their lives in our honor. while memorial day is to remember those lost, i would like to give a big thank you to everyone who has fought on our behalf, whether i agree with the battles or not. for those of you not from the states, or perhaps some of you who just never took the time to think about it, here is the history of the holiday. and now… MUFFINS!!
a lot of people i know substitute ingredients to make recipes healthier, or to replace something they do not have on hand, but how much of a difference does it really make? today, i will show you the major difference made between margarine and butter.

before i get started, i need to make a brief confession. i am a bad daughter. my mom’s birthday was on April 9th and I had great plans for what i wanted to send her. there is something (non-food) that i want to make her, but have not found a friend that has the things i need in order to make it. so then, i decided to save that for later, and at least send baked goods now. but she was on vacation. and then it was too hot out to ship. and then all the stores were closed.
