crisis cookies

this will be a short post…mainly because i just became a foster mommy to a cat a couple hours ago and i have no idea what i am doing (other than freaking out). while i waited for her to arrive, i decided to make cookies– not only to take my mind off of it, but also to potentially lure in some friends to help me out.

so, here’s the scoop: one of my best friends’ little sister wanted to adopt a shelter cat that was going to be put down. she can’t take in a cat until she moves, most likely 6 months. she asked everyone she knew and was desperate. the thought of a kitty being euthanized broke my heart, so i said i would take her in. it was the right thing to do, but i am *terrified*! the only pet i have had in over a decade was when i watched my sister’s dog, but he already knew me. this cat came from a shelter and has no clue who i am or where she is. for the past few hours, she has holed herself up under my dining room table, refusing to leave. she let me pet her, was purring, nuzzling, etc; i picked her up to show her where the litter box is, where the living room is, etc, but she keeps running back. when i say running, i mean it- girl is fast! since i can’t get her out from under the table, you will have to view her there:

i have given in and moved the litter box to my dining room; despite my strong desire not to have a litter box there, i have an even stronger desire not to have the rest of my dining room used as a toilet. attempting to show her this resulted in my face/lip being scratched, which is about as fun as it sounds. hopefully in a day or two she gets comfortable and i can move the litter box someplace better.

in any case, these cookies are quite tasty. next time you have a crisis, i suggest making them. yes, not having cookies in your home is a crisis.

Ingredients

• 1 cup butter, softened
• 1 cup sugar
• 1 cup packed brown sugar
• 2 eggs
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 2 cups old-fashioned oats
• 2 cups semisweet chocolate chips
• I added some cinnamon, feel free to do the same (I don’t measure such things, but maybe a teaspoon or two)

Directions

1. In a large mixing bowl, cream the butter, sugar and brown sugar. Beat in eggs and vanilla. Combine the flour, baking soda, baking powder and salt, and cinnamon if you are using it; add to creamed mixture. Stir in oats and chocolate chips.
2. Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350 degrees F for 11-12 minutes. Cool on wire racks.
