chocolate chocolate chip cookies

before i get started, i need to make a brief confession. i am a bad daughter. my mom’s birthday was on April 9th and I had great plans for what i wanted to send her. there is something (non-food) that i want to make her, but have not found a friend that has the things i need in order to make it. so then, i decided to save that for later, and at least send baked goods now. but she was on vacation. and then it was too hot out to ship. and then all the stores were closed.

i was going to make her treats today, but i decided to make her a craft project to be shipped with them, and i have been unable to do so yet. that being said: i am sorry mom, i love you very very much. you mean the world to me. okay. back to business. chocolate chocolate chip cookies.

i don’t generally like uber chocolatey things, but the folks i made these for sure do. i actually stopped doing birthday baking for my team, but when one of my employees who has been getting beaten up lately mentioned that him and our SE will both be traveling for business on their birthdays, and that i could ship their brownies there…well, i knew i must send some chocolate their way. plus they will be there training a team we want to do our bidding, so it wouldn’t hurt to butter them up. update: i brought some of them in to my office– rave reviews!! if you need a chocolately cookie, this is apparently the way to go  (o:

speaking of butter, i softened both sticks of butter before remembering that i planned to sub one of them with butter flavored Crisco, so i was forced to use the other stick for something or else throw it out…poor me, i now am stuck with scones. boohoo (translation: WOOHOOO!!!)

Recipe:

Ingredients

  • 1 cup butter, softened (I used 1/2 butter, half butter-flavored Crisco)
  • 1 1/2 cups white sugar (I split it between white sugar and brown sugar)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1/2 cup chopped walnuts (optional)
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
