As I have mentioned before, my mom and stepdad live in Nashville, which was devastated by a flood a little over a week ago. Thankfully, their house was not damaged, but the community was drastically affected. You may have caught one of the benefit concerts on tv, or seen some of the pictures on the news…but just incase, here are a couple that they sent me that I thought were pretty crazy:

I also received the following message from my stepdad, who is owed his Cookie of the Month anyway: “In addition to food and clothing for displaced flood victims I hear they are looking for cookies, so send them to me and I’ll re-distribute. Oatmeal and peanut butter cookies are specifically requested.” This reminded me that I never got around to trying the Oatmeal Cream Pies with different flavored fillings, and decided to rectify this immediately. For some reason they didn’t flatten out enough this time (perhaps my butter was not softened enough, or my baking powder was extra activated, or the cookie gods were laughing at me since my Butterfinger cookies ended up flat when I wanted them puffy). In any case, still good, just more of a mouthful than last time! For the filling I divided up the fluff icing and added peanut butter to some, and chocolate to some, otherwise it was the exact same recipe as last time. I apologize for so many photos of them, but they insisted that since I took attention away from them with the flood pictures, I make up for it with some glamour shots. oh– and the pb ones are slightly reminiscent of girls cout dosidos….mmm!

  1. WOW-ZAAA! Those cookie/icing cakes look fantastic. The “glamor” shots definitely did them justice. They look delicious.

    i don’t believe the filling will hold up when defrosted, but you could give it a shot… or you can share them and i will make them again, or mom can give them a go!
