for all of you out there whose cakes fell, brownies burnt, and cookies spread so thin you couldn’t even differentiate where one ended and the other began…. it happens to the best of us! my friend liz sent me a weight watchers recipe for pink lemonade cookies last year and i never got around to making them, so i had the brilliant idea to make them for the bbq of my friend shannon who is on weight watchers and is also a mary kay lady (they serve pink lemonade at their events)– how perfect would that be to give her a custom treat she could enjoy?

it would have been perfect if they had actually come out good. there was no picture on the recipe, so i had imagined in my head what they would look like. that image in my head was nothing like this:

to be fair, i am almost certain i know where i went wrong. the recipe said to thaw the frozen lemonade, and i thought i did, except in reality, i didn’t. there was definitely a glob of half-frozen lemonade that went in, which resulted in the dough being too wet, so i tried to fix it by adding a little more flour and a touch more baking powder, which i knew was stupid because i wasn’t increasing the proportions of every ingredient. i gave them a shot anyway though…and, well, you saw what happened. now, since there was no photo, i also had no idea how thick the glaze was supposed to be. initially the glaze looked amazing but nowhere near enough to ice all the cookies so i thinned it out…it got too thin, but at this point i knew there was no hope and didn’t bother wasting more sugar on it. i hoped that i could save them with the sugary glaze, however i could not. i dressed one up in an attempt to produce a halfway decent picture for you…

oh, and i burnt myself. and it wasn’t even in the same spot i always burn myself. (the new one is on the left, the repeat one is the faded scar on the right)

i know my mom is reading this… so i have to ask that she not freak out. it is just a burn- it will look just like the one on the right in a few weeks. and this is *so* much better than almost chopping off my toe again. for those of you who don’t know that story, i had a little mishap, ending with a tetanus shot and thankfully keeping all of my digits the last time i tried to clean out my garage. yesterday i tried again; i ended up without any real injury, just a few scratches from the boxes since it was too hot out to wear long sleeves. please indulge me and join me in being proud of my work this time around.
