as you may have read below, i have been having some technical difficulties, and tonight one more added itself into the mix…my CF card is reading as full even though it is empty. not sure if it is the card, my camera, my computer, or what….but even if it did work, i am still having trouble with my photo software which at this point i just need to find the disc for and reinstall. the good news is that i am able to upload photos to the site now…so this awful cell phone picture is a small victory!

since today is pi day (3.14) i considered making a pie, but because i could use some luck, i decided to go festive and make irish soda bread! i am using my friend kim’s recipe, as i do not have one of my own, and am hoping it came out okay. looking at the recipe it sounded an awful lot like scone recipes i have used. this was not all that surprising considering last week my friend ed put an irish soda bread that he received as a gift in the kitchen labeled “ridiculously large scone”. us ladies had a little chuckle. in any case, i think what i made tonight might actually be just a ridiculously large scone…so maybe that is all irish soda bread is?

update: delicious!!! i liked it and it got great reviews…. for those of you that feel too guilty eating scones, this is a low-fat, very low-sugar alternative with a very similar taste and texture!

Recipe:

4 Cups Flour
2 Tablespoons Sugar
1 Teaspoon Salt
1 Teaspoon Baking Soda
4 Tablespoons Butter
1 Cup Raisins
1 Egg (lightly beaten)
2 Cups Buttermilk

Preheat oven to 425.  Sift together flour, sugar, salt, and baking soda in a
large bowl.  Using pastry cutter or 2 knives, work butter into mixture until
it resembles a coarse meal. Add in raisins.  Make a well in the center of
the mixture. Ad in beaten egg and buttermilk. Mix in with wooden spoon until
dough is too stiff to stir. Dust hands in flour and gently form dough until
ball/loaf.  Transfer dough to large cast iron skillet or baking sheet. Score
top of dough 1/2 inch deep with an “X”.  Bake until golden brown, 30-45 min.

  3. i would agree! the irish soda bread does kind of look like a gigantic scone. great pic by the way and i hope your technical; snafus clear up soon.
