giant poptart

part of being known as the baker is having things sprung on you last minute and having to come up with a way to make it happen. to be fair- 1. i truly enjoy it and 2. in this case i should have known it was lauren from my work team’s birthday, but the day planner i had was a school year style one and it ended last week. i have baked for the birthdays of everyone else i manage, so i didnt want to be a bad boss and not make something for one of my all-stars (this girl blows her numbers out of the water time and time again).

if i was better at decorating cakes, i would have made a blackberry cake for her, as she is my blackberry champ…alas, i am nowhere near skilled enough to replicate a blackberry on a cake with no supplies and no time. i then recalled that last winter she enjoyed the chocolate chip cookie dough layered brownies so i considered making that, but another member of the team (the same one that came up to me around noon and said “hey, are you doing anything for lauren’s birthday tomorrow?”) pointed out that she is a poptart junkie. my mission was clear: find a way to make a giant poptart, or wuss out and decorate a cake like a poptart.

i scoured the internet as much as i could in the few spare minutes i had during work today and found a few recipes for homemade poptarts but none for a giant one. the ones i found seemed to pretty much just be pie crust with jam in the middle…fancy. ha.

with only a couple hours at my disposal, i decided to go this route…. i made some pie crust hoping one batch would be good… but as i rolled it out and saw how thin it was i decided to double it. hopefully this was not a mistake, but we will find out tomorrow i suppose! i stuffed the middle with brown sugar and cinnamon, covered the top in some frosting…. and am hoping for the best here  [o:

UPDATE: this thing is delicious!!! it has been agreed that it tastes just like the real thing. i done good.
