save a cow, eat a cowboy cookie
i know it would appear that i am ripping off the big & rich song “save a horse, ride a cowboy”, but in actuality, i really am asking that you skip the burger and eat these cookies. that isn’t just because i am vegetarian, but mainly based on how much my co-workers absolutely loved these! ironically, i was upset that they didn’t come out the way i was expecting. i think my expectations were based on the fact that the ingredients are so very similar to my magic cookies and trail mix cookies, and these cookies looked and tasted very different (these were very flat, crunchy–i love crunchy– and the cinnamon–which i also love– is more pronounced) so, while i definitely think they came out good, my first impression was definitely confusion.

one thing i noticed about this recipe is that it is easy to memorize, as the measurements all seem to be similar. if you can’t remember how much of something to add, you can logically deduce it given the options. i will admit that i considered not making this recipe, since it was published in a magazine as laura bush’s favorite, and, well, i don’t want to get all political on you, but i am not a big fan of dubya. my mom has made this recipe before and had good things to say about it, so i gave it a shot, and i (as well as everyone in my office) am glad that i did!
Recipe:
¾ cup flour
¾ tsp. baking powder
¾ tsp. baking soda
¾ tsp. ground cinnamon
¼ tsp. kosher salt
6 tbls unsalted butter softened
6 tbls sugar
6 tbls light brown sugar
1 egg
¾ tsp. vanilla
¾ cups rolled oats
¾ cup semi sweet chocolate chips
½ cup chopped pecans
½ cup sweetened flaked coconut
Heat oven to 350. In a bowl, wisk first 5 ingredients; set aside. In a large bowl, beat butter with a handheld mixer until smooth. Add sugars, beat until fluffy. Add egg and vanilla; beat until smooth. Add flour mixture; beat to form a dough. Stir in oats, chocolate, pecans, and coconut. Form dough into 24 balls, divide between 2 parchment-lined baking sheets. Bake until cooked through, 16-18 minutes. Let cool.
