i absolutely love breakfast foods… pancakes, waffles, french toast, eggs, veggie sausage, veggie bacon, potatoes, fruit, oatmeal… and just about everything else. while i most likely make breakfast for dinner more often than other people, it is not often enough that i actually make it *for* other people. well, this week, the stars aligned. twice.
it was sheryl’s turn to have the potluck at her house, and i decided to go with a recipe my mom had suggested for a pesto pasta salad. in the process of making this, i realized that i apparently didn’t own a steamer (shame on me). although i dirtied just about every pot in my kitchen, the pasta salad was very easy to make and came together quickly. i wanted to also bring a dessert since i think it is expected of me anywhere i go, so at the request of the host, i went with blueberry bars. they are so easy to make and everyone (including me) loves them.

i typically post about things i made from scratch, but every so often i like to share a product review since–let’s face it– we all use mixes sometimes. about a year and a half ago my doctor put me on a sugar free diet. that’s right…no sugar, no honey, no molasses, no sucanat, nothing. okay, except a little bit of fruit (thankfully!!). for someone like me this sounded like a death sentence! some of you out there may be thinking that it isn’t a big deal since there are some great tasting sugar-free alternatives out there, that diabetics and dieters eat these products all the time; unfortunately, as i have found out, my body and artificial sweeteners do not get along. at all.

like many words, over time aebleskiver has lost its meeting. the definition of aebleskiver is apple slices, however the name refers to these amazing little round pancakes! although i am mostly italian, another part of my heritage that i celebrate is that of the danes. i dont meet people from denmark all that often (prolly because it is so great there that nobody wants to leave), so when i do i am super excited. there are some things about the danes that i just cant stand behind though: they save aebleskiver for christmas time! and they don’t even consider them a breakfast food (they are a snack or dessert)!

although baking/cooking is my passion, i make my living by working in corporate america. if i tried to explain to you what the company i work for does, or even what my job is, it would still be unclear after you asked any question you could think of… here is the short answer: companies, schools, governments, etc buy all sorts of computer stuff from us, i manage a team of folks that specialize on a particular product manufacturer and help the sales reps. just like i do something outside of my day job, one of the gentlemen on our help desk does something spectacular in addition to his job at our company: HE PROTECTS OUR FREEDOM AND PUTS HIS LIFE ON THE LINE FOR US! He came back from Iraq a few weeks ago, and will be returning to work this Monday, so a bunch of us ladies are baking as part of the welcome back/thank you efforts.

i was intent on making one of two things this week– strawberry tarts or strawberry lemonade cupcakes; the key ingredient here being strawberries. sunday evening i set off to the grocery store in search of fresh strawberries and pie weights (mine seem to have walked away), to find that the local grocery store was fresh out of berries! i walked over to the produce guy asking if perhaps they were about to put some out and as he was telling me that the shipment hadnt come in, some guy walks past saying “yeah, i got the last carton!” Before pouncing, i stopped to look and noticed that it was not nearly enough strawberries for my needs and decided that no, today is not the day to get arrested for attacking someone in the grocery store.
