i am ashamed that it has taken me so long to post this… i no longer have the chaos excuse to hide behind since i used that up last week, so i just have to hope that you will forgive me. so, my step-dad had commented on the pineapple upside down cakes that he loves brown sugar and wants some; since pineapple upside down cakes most likely don’t travel all that well, i found a recipe for his cookie of the month that would– brown sugar cookies. i have to say that my first attempt at pineapple upside-down cake was a success! i will admit though that there was a moment of nervousness as i was lifting up the pan, waiting to see what i would find under there…especially since i thought it was starting to smell like the pineapple and brown sugar were burning! thank goodness, there was certainly no burning!

part of being known as the baker is having things sprung on you last minute and having to come up with a way to make it happen. to be fair- 1. i truly enjoy it and 2. in this case i should have known it was lauren from my work team’s birthday, but the day planner i had was a school year style one and it ended last week. i have baked for the birthdays of everyone else i manage, so i didnt want to be a bad boss and not make something for one of my all-stars (this girl blows her numbers out of the water time and time again).
