chewy chocolate chip cookies

no, there is nothing involving olives in these cookies, but they are a peace offering at work for a group that has been doing a whole lot for me, and i have inadvertently ruffled the feathers of. i won’t get into the situation, but it isn’t good, and cookies certainly won’t fix it, but baked goods are a good compliment to a thank you card in my humble opinion.

thick and chewy chocolate chip cookies

…i have not abandoned you. some say that distance makes the heart grow fonder, so those of you must be missing me dearly. others say that distance makes the heart go wander, so you folks have moved on and perhaps didn’t even stop to look at this. in any case, i certainly miss updating you with my weekly baking escapades, so i hope to resume doing so! i have been experiencing a rough patch in my health problems and focusing most of my energy on getting better. i have, however, been baking a bit here and there…just nothing impressive. i will leave you with a recipe i tried out that claimed they were the best chocolate chip cookies EVER. they were quite good, but i am not sure about the whole “ever” claim.

low temperature chocolate chip cookies

i have a lot of friends that are enamored with slow cooking/crock pots. something strikes me a bit odd about about food cooking allllllll day. i am very particular about food consistency, and picky about soup and other mushy vegetables, so i opted for a different kind of slow cooking– low temperature cookies!

i know it would appear that i am ripping off the big & rich song “save a horse, ride a cowboy”, but in actuality, i really am asking that you skip the burger and eat these cookies. that isn’t just because i am vegetarian, but mainly based on how much my co-workers absolutely loved these! ironically, i was upset that they didn’t come out the way i was expecting. i think my expectations were based on the fact that the ingredients are so very similar to my magic cookies and trail mix cookies, and these cookies looked and tasted very different (these were very flat, crunchy–i love crunchy– and the cinnamon–which i also love– is more pronounced) so, while i definitely think they came out good, my first impression was definitely confusion.

i imagine that by now you have all heard the bogus story about the woman who asked for the cookie recipe at neiman marcus, thought it was $2.50, and when she got the bill for $250, decided to get revenge by spreading the recipe all over the place. incase you haven’t, here’s the whole thing on snopes. in any case, it is still a darn good cookie recipe! my friend liz was making a whole ton of them as favors for a bridal shower she is going to, and i offered to help with this daunting task. she came over saturday morning and we got to work…man, it was nice that there were two of us because making over a hundred cookies can take a little while.

first and foremost, i hope all you dads out there had a great day! so, i don’t actually have two dads, and it is not at all like the cheesy early 90s tv show… but i do have a father and a step-father. i am one of those people who really lucked out by ending up with two dads that love me and hold a special place in my heart! to show my love, i let each of them choose what kind of cookie they would like for father’s day: my father chose soft & chewy chocolate chip, while my step-father chose classic peanut butter– which doubles as his cookie of the month.

good friends + good food + good weather + good games = recipe for a great day!

-whew- having company over is a lot of work, especially if you are one of those do-it-all-yourself type people! yes, that means i am one of them. friday i made two cold pasta dishes: penne with tomatoes and fresh basil, and rotini with veggies in a vinaigrette; blueberry oat bars, vanilla as well as chocolate cupcakes with various icings, marinated the portobellos, brewed iced green tea, squeezed fresh lemonade, and

every so often i try to find a chocolate chip cookie recipe that i like better than the standard tollhouse one (see: Exhibit A), but i usually end up sticking with my old standby. this time, it was a recipe on the back of the flour package that i was trying. since i had a vegan potluck to go to and i enjoy providing a dairy-free alternative to my lactard friends at work, i decided to make a dairy-free, egg-free version. but then, i had an idea! i have made plenty of regular cookies, and plenty of vegan cookies, but i don’t believe i have ever made them side by side to compare how the same recipe turns out with the replacements– until now.

one of my best friends, elyse, and her boyfriend just moved from arizona to virginia, and to celebrate her return to the right coast, her parents had a party for them this past weekend. since elyse hasn’t been here to sample my treats and has told me on numerous occasions how she drools over the pictures, i told her to hit me with her best shot– whatever she wanted me to make i would. her sister was already making red velvet cupcakes and oreo truffles, so she told me that she conferred with her boyfriend as well as her father, and the three of them decided they wanted chocolate chip cookies.
