i know it would appear that i am ripping off the big & rich song “save a horse, ride a cowboy”, but in actuality, i really am asking that you skip the burger and eat these cookies. that isn’t just because i am vegetarian, but mainly based on how much my co-workers absolutely loved these! ironically, i was upset that they didn’t come out the way i was expecting. i think my expectations were based on the fact that the ingredients are so very similar to my magic cookies and trail mix cookies, and these cookies looked and tasted very different (these were very flat, crunchy–i love crunchy– and the cinnamon–which i also love– is more pronounced) so, while i definitely think they came out good, my first impression was definitely confusion.

as we all sit down to watch the saints go marching in, the colts go for a stampede, and some hilarious commercials, i cant help but wonder which will be better: the super bowl, or the super bowl of cookies i have here. i am definitely a football fan, but i have no loyalty nor disdain for either team; i am also definitely a cookie fan, and i do have some loyalty to oatmeal, chocolate and cinnamon.

ive been seeing donut muffins pop up in all the baking magazines this year and i must admit i was intrigued. i try to make my treats at least decently healthy, so i am reluctant to fry up some doughnuts (tho i am sure i will one of these days). i did, however, receive a request for apple cider donuts, which i am a huge fan of; i considered making them but all the recipes i saw noted that they were not so good the next day, so unless i wanted to fry them up on my way to work, it wasnt happening.

one of the best and worst parts of being a seasoned baker is knowing exactly when you messed up the recipe, way before the batter makes it into the oven. i love my stand mixer ever so muchly, and as i am writing this, i have decided that something i love so much should have a name (hey, you named your car), so he shall go by stan. stan the mixer. anyway, i know that stan would never deliberately harm my recipes so i will not blame him, i will take all the blame myself. it is just that he makes it so easy to step back and put things away or clean up while he is doing his thing…. and, well, i let the batter beat too long. i figured before i start messing with it, i wanted to see what it would do in the oven; there was an off chance that it would only make them a little bit flat and since they are normally super puffy and moist this would be okay.

you know how people say “oh, i could do that in my sleep…”? well, i am pretty sure that most of the baking i did this week was actually in my sleep. wait, no. i have barely slept at all this week, so perhaps a trance or a daze would be a better word for it. there are many things in my life that i should be quite proud of, things that truly are impressive, but today… today i am proud that i did not: yell at anyone, punch anyone, rip my hair out, fall down in a fit of tears, fall asleep at my desk, start laughing hysterically for no reason in a meeting with our CEO, or anything else indicative of the mental state i am in. seriously, between not sleeping and some of the people i encountered in my work day (okay, the screaming children at target didn’t help either), i feel like im losing my mind… going bananas, if you will.

i noticed something today: the lighting in my house kinda stinks. if it isnt poor lighting, it is bad shadows. even though i started by 10am, i unfortunately did not finish baking until the sun had already set, so the possibility for natural lighting was out of the question; needless to say, i had to get a little creative with lamps and whatnot. hopefully one of these days i can afford some lighting and lenses to get some better pix up here!

part of being known as the baker is having things sprung on you last minute and having to come up with a way to make it happen. to be fair- 1. i truly enjoy it and 2. in this case i should have known it was lauren from my work team’s birthday, but the day planner i had was a school year style one and it ended last week. i have baked for the birthdays of everyone else i manage, so i didnt want to be a bad boss and not make something for one of my all-stars (this girl blows her numbers out of the water time and time again).
