i know it would appear that i am ripping off the big & rich song “save a horse, ride a cowboy”, but in actuality, i really am asking that you skip the burger and eat these cookies. that isn’t just because i am vegetarian, but mainly based on how much my co-workers absolutely loved these! ironically, i was upset that they didn’t come out the way i was expecting. i think my expectations were based on the fact that the ingredients are so very similar to my magic cookies and trail mix cookies, and these cookies looked and tasted very different (these were very flat, crunchy–i love crunchy– and the cinnamon–which i also love– is more pronounced) so, while i definitely think they came out good, my first impression was definitely confusion.

is the coco for the coconut or the cocoa? who cares when it tastes this good! these ultra-rich, decadent treats were a fan favorite in the office! the only less than amazing feedback i got was that since they were so rich, i perhaps should have cut them a little smaller. oops. but hey, i didnt force them to devour it in under a minute, they just couldn’t help themselves!

ok, so you bought a few boxes of girl scout cookies from your niece, and one from the lady who sits next to you at work, and you just couldn’t resist when the cute little girls outside the grocery store asked if you would help support their troop. you thought to yourself you don’t know what you are going to do with all those cookies, but before you knew it…:::WHAM::: full-fledged addiction. now that the cookie selling season is coming to a close, what’s an addict to do?

so this morning i had some minor surgery, and since my mom is in town for a wedding she was kind enough to drive me and spend the day with me while i was coming out of anesthesia. she was saying how she wanted to bake for the office she is working out of this week but didnt have time. since i was not really capable of intelligent thought and had already laid down for a few hours, i figured i might as well help my mom out and do a little baking to help me feel back to normal. i decided that i would make two things and bring half in to my office as well [o:

it was pointed out to me last week that my past several treats have been some form of muffin or cupcake… which reminded me that i have been neglecting all the other types of goodies out there that arent shaped like a cup! this means that my strawberry lemonade cupcakes and strawberry tartlets will have to wait another week or two… sorry to anyone looking forward to them.
