gluten free sugar free almond butter cookies

parchment paper is my secret weapon. i love that unless it is a bad recipe that flattens out completely or i forget about them and the whole darn things are hockey pucks, the bottoms of my cookies very rarely burn; by very rarely, i mean that i can’t even remember the last time.

apple pie cookies... amazing sure, the autumnal equinox isn’t until the 22nd, but as soon as the calendar said september and we had our first sub-75 degree day, i was psyched on fall. i mean, come on, even starbucks brought back their fall drinks (read: as soon as you finish making these cookies, go get yourself a pumpkin spice latte)! my folks came up to help me out with a medical issue, so while they were here i gave my stepdad a choice of cookies for his cookie of the month…he went with something i bookmarked long ago and have been eagerly wanting to make– apple pie cookies.

i am ashamed that it has taken me so long to post this… i no longer have the chaos excuse to hide behind since i used that up last week, so i just have to hope that you will forgive me. so, my step-dad had commented on the pineapple upside down cakes that he loves brown sugar and wants some; since pineapple upside down cakes most likely don’t travel all that well, i found a recipe for his cookie of the month that would– brown sugar cookies.

i imagine that by now you have all heard the bogus story about the woman who asked for the cookie recipe at neiman marcus, thought it was $2.50, and when she got the bill for $250, decided to get revenge by spreading the recipe all over the place. incase you haven’t, here’s the whole thing on snopes. in any case, it is still a darn good cookie recipe! my friend liz was making a whole ton of them as favors for a bridal shower she is going to, and i offered to help with this daunting task. she came over saturday morning and we got to work…man, it was nice that there were two of us because making over a hundred cookies can take a little while.

first and foremost, i hope all you dads out there had a great day! so, i don’t actually have two dads, and it is not at all like the cheesy early 90s tv show… but i do have a father and a step-father. i am one of those people who really lucked out by ending up with two dads that love me and hold a special place in my heart! to show my love, i let each of them choose what kind of cookie they would like for father’s day: my father chose soft & chewy chocolate chip, while my step-father chose classic peanut butter– which doubles as his cookie of the month.

As I have mentioned before, my mom and stepdad live in Nashville, which was devastated by a flood a little over a week ago. Thankfully, their house was not damaged, but the community was drastically affected.

we all know that when life hands you lemons, you make lemonade… but what if life can’t even manage to give you some lemons to make lemonade out of? what’s a girl to do on a beautiful spring day, looking for a refreshing treat?

i am pretty sure my mom is wondering where the cookie of the month is since march is almost over….and a few of you may be wondering as well. i attempted to make cream cheese cookies a couple weeks ago but i tried to speed up the chilling process by throwing the dough in the freezer for a couple hours instead of in the fridge overnight and it did not work out well. i was thawing it in the fridge overnight, except i didn’t have time to make them the next day or the day after…so i had to scrap it. i was going to give them another go, but since it has been warmer out i am reluctant to mail anything with cream cheese.

first and foremost, for those of us that watch LOST…. merry lostmas! the wait is finally over! i am a major lost junkie– i am one of those people who you will find pouring over every single literary, mathematical, scientific, musical, etc reference that they make and tying a theory into it; yes, that person who pays attention to every single detail and will pause the show if the phone rings (or just not answer it– seriously, who calls during lost?). i will hopefully have the time to juggle my lost blog this year, as last year i didnt write up my thoughts on a few episodes because i was just too busy.

for the past two days i have done almost nothing. no, i am not kidding, i really didn’t do anything of significance. with the exception of a trip to the grocery store and talking online, i did not leave the house or interact with any humans. i indulged in movie and tv show marathons, and since my house was clean and christmas decorations taken down from my mother coming over on friday (ah, mother-daughter cleaning bonding)… i took the opportunity to be lazy.

around 5 or 6pm, however, i realized that it was in fact sunday and i had not yet baked. i baked so much over the holidays and everyone is pretending to be on a diet, so i actually considered not baking. but then i remembered that i signed up my step father for my ‘cookie of the month’ club, which in reality did not exist until i was trying to think of what to add to his christmas gift. the man has just about everything and rather than buy another gift that he could easily buy himself i wanted to make him something. since i am not 5 a popsicle picture frame was out of the question, so i went with cookies. he loves cookies. SO- every month this year i will be mailing him a cookie of the month, the first batch going out tomorrow.

this month: oatmeal dark chocolate raisin cookies. for the recipe, it is the same as the oatmeal white chocolate cranberry, but swapping out the dried fruits and chocolates. while i’m at it, here is the new packaging logo that my friend jeremy crafted for me (my initials are SS):
