before i get started, i need to make a brief confession. i am a bad daughter. my mom’s birthday was on April 9th and I had great plans for what i wanted to send her. there is something (non-food) that i want to make her, but have not found a friend that has the things i need in order to make it. so then, i decided to save that for later, and at least send baked goods now. but she was on vacation. and then it was too hot out to ship. and then all the stores were closed.

vegan chocolate peanut butter pillow cookies

earlier this week, i brought you peanut butter pillow cookies filled with chocolate brownies; a little over a year ago, i showed you chocolate cookies filled with peanut butter; but my vegan friends have sadly had to miss out on both of these. i can’t feel too bad since i have made some other great vegan treats, but seriously, these are too good to miss out on. i can’t honestly say which of the three is best…they are all so great! if you try making them all, please let me know your thoughts on the winner!

peanut butter brownie pillow cookie, cut open

it is a wonderful feeling to find your soul mate… ya know, the one you were meant to be with, and everyone in your presence can’t help but agree; the one where when someone bites into the two of you together a big smile comes over their face– wait, wha??? i wonder if peanut butter cookies and fudgy chocolate brownies know how perfect they are together. while this blog is certainly no stranger to peanut butter and chocolate treats, nor pillow cookies, this is the first time i have shown you a brownie-stuffed peanut butter cookie, and it is about darn time. my sincere apologies. (in my defense, at least i showed you peanut butter-stuffed chocolate cookies).

espresso coffee shortbread cookies with chocolate hazelnut filling

coffee, hazelnut, chocolate, cookies… all of these things are on the list of things i need more of in my life. so, today, i baked them all into one brilliant masterpiece! while these shortbread cookies might hold their own without the nutella, and could easily be wonderful with a little bit of melted chocolate drizzled on top, or dipped in chocolate, i couldn’t resist the urge to slather it on.

thick and chewy chocolate chip cookies

…i have not abandoned you. some say that distance makes the heart grow fonder, so those of you must be missing me dearly. others say that distance makes the heart go wander, so you folks have moved on and perhaps didn’t even stop to look at this. in any case, i certainly miss updating you with my weekly baking escapades, so i hope to resume doing so! i have been experiencing a rough patch in my health problems and focusing most of my energy on getting better. i have, however, been baking a bit here and there…just nothing impressive. i will leave you with a recipe i tried out that claimed they were the best chocolate chip cookies EVER. they were quite good, but i am not sure about the whole “ever” claim.

parchment paper is my secret weapon. i love that unless it is a bad recipe that flattens out completely or i forget about them and the whole darn things are hockey pucks, the bottoms of my cookies very rarely burn; by very rarely, i mean that i can’t even remember the last time.

snickerdoodle cookies

last september, i filled the request of my friend tom and shipped him snickerdoodles…problem was, he didn’t mention that he was going away, so by the time he ate them they were several days old. he said they were tasty, but of course i wanted him to try them fresh. since the recipe i used was good, but not phenomenal, i needed to give another one a whirl. i fully intended on using one from one of the holiday baking magazines, but ultimately decided on browneyedbaker instead.

perfect for shipping pumpkin cookies

you may recall that last month i was frustrated and looking for a pumpkin cookie that would ship well, without getting mushy, sticking to the packaging, etc… i scoured my recipe books, favorite websites, and google images, but i did not find any that looked good enough. i considered making a regular cookie and just adding pumpkin pie spices (and i still might try that in the future because, well, let’s face it, the spices are what i really like about pumpkin goodies), but i felt like that would be short-changing the recipients as well as you fellow bakers.

i have a lot of friends that are enamored with slow cooking/crock pots. something strikes me a bit odd about about food cooking allllllll day. i am very particular about food consistency, and picky about soup and other mushy vegetables, so i opted for a different kind of slow cooking– low temperature cookies!
