sure, the autumnal equinox isn’t until the 22nd, but as soon as the calendar said september and we had our first sub-75 degree day, i was psyched on fall. i mean, come on, even starbucks brought back their fall drinks (read: as soon as you finish making these cookies, go get yourself a pumpkin spice latte)! my folks came up to help me out with a medical issue, so while they were here i gave my stepdad a choice of cookies for his cookie of the month…he went with something i bookmarked long ago and have been eagerly wanting to make– apple pie cookies.
last week i brought in espresso chocolate chip cookies and by the time one of my friends got there i was all out…she looked like she could really use a cookie so i felt pretty bad. that night i texted her to see if she was okay and she let me know that her grandfather, who she was very close with, had passed away. despite being 9pm, i knew what i had to do. i wasn’t sure what kind of cookies to make, but she is pretty healthy and likes trail mixy type things, so i took my base oatmeal cookie recipe, threw in raisins, chocolate, cinnamon, walnuts, and just about everything but the kitchen sink. i considered throwing the kitchen sink in there, but i needed it for the dirty dishes!

since i was attempting zombie cupcakes for the birthday boy, i wanted to make something relatively easy as my general baking. everyone had such a rough week last week, i figured chocolate was a wonderful direction to go in. i had made these last winter as a birthday bake for one of the guys on my team and decided to try them again with some more variations.

it was pointed out to me last week that my past several treats have been some form of muffin or cupcake… which reminded me that i have been neglecting all the other types of goodies out there that arent shaped like a cup! this means that my strawberry lemonade cupcakes and strawberry tartlets will have to wait another week or two… sorry to anyone looking forward to them.

incase you haven’t noticed, i love peanutbutter. i am not only fairly certain that you have noticed, but i am pretty sure that everyone in the grocery store noticed on this day, as i piled my arms full of peanutbutter jars. i had an important mission: make lots and lots of peanutbutter cookies.
