when you think of memorial day, the first though that pops into your head is most likely the barbecues and the unofficial start of summer… some of you may think of the parades…  but hopefully everyone took a moment to reflect upon the brave men and women that have given their lives in our honor. while memorial day is to remember those lost, i would like to give a big thank you to everyone who has fought on our behalf, whether i agree with the battles or not. for those of you not from the states, or perhaps some of you who just never took the time to think about it, here is the history of the holiday. and now… MUFFINS!!

rather, ‘a salted cookie’. salted peanut butter oatmeal, to be exact. if you have been reading my blog, or understand that the tags on the left are sized according to frequency used, you know that i absolutely love peanut butter (despite knowing that it is not even close to the best nut butter for you), oatmeal, and obviously cookies. typically though, you see me combining peanut butter with another flavor, generally chocolate on here, but i do mix it up a bit in my everyday life. for this recipe though, i used something that you will almost never see me using for the main complimentary flavor, salt…while sweet & salty go well together, these cookies don’t really have a “sweet”, so it is really more savory than my usual.

no-bake peanut butter chocolate cookies / mud cookies

we are in the middle of the umpteenth heat wave of 2010, and i decided that i didn’t want to fire up the oven today. i was going to make granola bars, but after i didn’t share anything with the usuals last week (most of them unfortunately didn’t get to try this cake), i didn’t think granola bars would cut it. here’s a little secret though: these no-bake cookies are practically granola bars. something that i forgot to consider, though, is that standing over a pot, stirring it until everything melts and then until it boils, isn’t exactly an icebox. thankfully, it cooked pretty fast!

last week i brought in espresso chocolate chip cookies and by the time one of my friends got there i was all out…she looked like she could really use a cookie so i felt pretty bad. that night i texted her to see if she was okay and she let me know that her grandfather, who she was very close with, had passed away. despite being 9pm, i knew what i had to do. i wasn’t sure what kind of cookies to make, but she is pretty healthy and likes trail mixy type things, so i took my base oatmeal cookie recipe, threw in raisins, chocolate, cinnamon, walnuts, and just about everything but the kitchen sink. i considered throwing the kitchen sink in there, but i needed it for the dirty dishes!

i imagine that by now you have all heard the bogus story about the woman who asked for the cookie recipe at neiman marcus, thought it was $2.50, and when she got the bill for $250, decided to get revenge by spreading the recipe all over the place. incase you haven’t, here’s the whole thing on snopes. in any case, it is still a darn good cookie recipe! my friend liz was making a whole ton of them as favors for a bridal shower she is going to, and i offered to help with this daunting task. she came over saturday morning and we got to work…man, it was nice that there were two of us because making over a hundred cookies can take a little while.

what do you get when you combine a kook and a cook? apparently, raisinets bars. you have heard me talk about my friend ed from work, well i forgot to mention that there are in fact TWO awesome, hilarious eds at work who enjoy my baked goods. presumably as a joke, the other ed suggested that i make a raisinets casserole or something to that effect yesterday. today, he suggested a raisinets tostada, or loaf. yes, this all sounds pretty crazy, but it inspired me to make an actual raisinets treat. i did a quick search of the internet and although i found some cookie recipes, ended up going with oatmeal bars. this is another one of those treats that you can convince yourself that it is healthy– dark chocolate and raisins provide antioxidants, oatmeal provides whole grains, vitamins & minerals, fiber, etc. sure, they have butter and sugar, but we can look past that, can’t we? we all have flaws.

so you have all heard me complain about the buttermilk predicament… this week i tracked down an oatmeal muffin recipe to get the job done. i took the advice of some of the comments and added vanilla and cinnamon. these got good, but not rave, reviews in the office.
