i absolutely love breakfast foods… pancakes, waffles, french toast, eggs, veggie sausage, veggie bacon, potatoes, fruit, oatmeal… and just about everything else. while i most likely make breakfast for dinner more often than other people, it is not often enough that i actually make it *for* other people. well, this week, the stars aligned. twice.

i promised you gluten-free vegan pancakes, and gosh darnit, i fully intend on delivering! this recipe was definitely a step in the direction (MUCH better than the buckwheat ones), seeing as i was able to eat– and enjoy– these! it wasn’t quite the perfect pancake that i will be craving, but i will keep looking for a keeper, and until then, this will certainly do! and yes, i realize that this is almost the exact same picture as the buckwheat ones, hence “take 2″.

so, first and foremost, apologies for the silence– the past couple weeks have been insane. between residual post-conference madness (the sales reps are all jazzed up and selling, which requires support from me and my team), filling three spots (which means countless interviews, processes, and doing some of the work for those positions myself), half my team being out (vacations, sick, conferences, etc), meetings, projects, a visit from my folks, a wedding, a going away party, a birthday outing, various other social plans, taking advantage of the beautiful weather, and several things that i am sure i am forgetting, i haven’t been able to focus long enough to actually write up a blog post. ok, really, i am sure i could have, but if i blogged along the way, my past two weeks wouldn’t sound nearly as busy as they just did, now would they?

i typically post about things i made from scratch, but every so often i like to share a product review since–let’s face it– we all use mixes sometimes. about a year and a half ago my doctor put me on a sugar free diet. that’s right…no sugar, no honey, no molasses, no sucanat, nothing. okay, except a little bit of fruit (thankfully!!). for someone like me this sounded like a death sentence! some of you out there may be thinking that it isn’t a big deal since there are some great tasting sugar-free alternatives out there, that diabetics and dieters eat these products all the time; unfortunately, as i have found out, my body and artificial sweeteners do not get along. at all.

like many words, over time aebleskiver has lost its meeting. the definition of aebleskiver is apple slices, however the name refers to these amazing little round pancakes! although i am mostly italian, another part of my heritage that i celebrate is that of the danes. i dont meet people from denmark all that often (prolly because it is so great there that nobody wants to leave), so when i do i am super excited. there are some things about the danes that i just cant stand behind though: they save aebleskiver for christmas time! and they don’t even consider them a breakfast food (they are a snack or dessert)!
