chocolate chip pumpkin bread

you may have noticed that i am a couple weeks behind in my posting… but this pumpkin bread is still from december, as i refuse to let go of fall. to be fair, this isn’t all me; i asked my friend ed, the birthday boy, what he wanted and he said pumpkin, i knew that the fall season would need to be extended until the very end (we still have until the solstice, ya know). even then, i am pretty sure you will find me making pumpkin treats well into winter…especially this bread! mmmmmmmmm

perfect for shipping pumpkin cookies

you may recall that last month i was frustrated and looking for a pumpkin cookie that would ship well, without getting mushy, sticking to the packaging, etc… i scoured my recipe books, favorite websites, and google images, but i did not find any that looked good enough. i considered making a regular cookie and just adding pumpkin pie spices (and i still might try that in the future because, well, let’s face it, the spices are what i really like about pumpkin goodies), but i felt like that would be short-changing the recipients as well as you fellow bakers.

the best pumpkin scones ever

yep, that’s what these scones are made of. okay– so i know that i tell you most things are incredible and worth making, but these really rocked my world! if you have ever been to starbucks for a pumpkin scone, this is as close as it gets, if not better. maybe i am biased, seeing as pumpkin spice and scones are two of my favorite things, but i am considering making these weekly– nay, daily.

the air is crisp, the breeze is refreshing, the temperature is in the 60s… it’s official, fall is here!!! i have said it before, and i will say it again– I LOVE FALL!  not only do i love the weather, but i love all the spiced goodies, so although i started a little early with the apple pie cookies, i am kicking off fall baked goods season, so expect lots of apple, pumpkin, cranberries, pie-like things, etc!

some things i am thankful for: my incredible, loving mother; my angel on earth of a grandmother; good friends; cozy blankets; slightly grey fall mornings; having a nice home and a steady job; having a washer/drier in my home; nice, hot showers; jacuzzi tubs; relatively good health; good tea; fancy coffee drinks and baked goods; great music and movies; days off of work; the daily freedoms that we often take for granted as american citizens.

pumpkin cream cheese 4

even though autumn began back in september, i continue to fall more and more in love with it as the season progresses. all of the seasons have their positives and negatives, but to me fall has some of the greatest positives– there is just this great feeling in the air! the smells of fresh apple and pumpkin goods, the beautiful colors of the leaves, having the windows and sliding doors open while a football game is on, walking on a collegiate campus like princeton, and my favorite part: being able to wear sleeves while also not freezing. see, i am very sensitive to the heat. at 75 degrees anything with sleeves is no longer an option for me, yes, even short sleeves. however, in the winter it is always so cold and dark out, and while i enjoy ice skating, sledding, snowboarding/skiing, and all the holiday treats, it gets in the way of doing a lot of things. fall though… fall is great.

pumpkin cookies 3

one of the best and worst parts of being a seasoned baker is knowing exactly when you messed up the recipe, way before the batter makes it into the oven.  i love my stand mixer ever so muchly, and as i am writing this, i have decided that something i love so much should have a name (hey, you named your car), so he shall go by stan. stan the mixer. anyway, i know that stan would never deliberately harm my recipes so i will not blame him, i will take all the blame myself. it is just that he makes it so easy to step back and put things away or clean up while he is doing his thing…. and, well, i let the batter beat too long. i figured before i start messing with it, i wanted to see what it would do in the oven; there was an off chance that it would only make them a little bit flat and since they are normally super puffy and moist this would be okay.
