last week i brought in espresso chocolate chip cookies and by the time one of my friends got there i was all out…she looked like she could really use a cookie so i felt pretty bad. that night i texted her to see if she was okay and she let me know that her grandfather, who she was very close with, had passed away. despite being 9pm, i knew what i had to do. i wasn’t sure what kind of cookies to make, but she is pretty healthy and likes trail mixy type things, so i took my base oatmeal cookie recipe, threw in raisins, chocolate, cinnamon, walnuts, and just about everything but the kitchen sink. i considered throwing the kitchen sink in there, but i needed it for the dirty dishes!

i would usually throw the dishes in the dishwasher, but i was too busy packing to empty the dishwasher when it finished running. this tuesday through saturday was my company’s annual global sales conference, and thankfully it was local, so leaving the dishes in the sink only caused me anxiety for one day–i went home briefly the next day to make myself a smoothie and while i was here i cleaned up from the cookies. it was a bit of a tease to be home for half an hour though, since i knew i had to head back to the 7am to somewhere between 11pm and 2am daily events (yeah, you read those hours right). while the days are very exhausting, and i feel like i am being pulled in a million directions, and struggling to stay awake, i must say that some very good times are had! it is nice to see some of the field reps that are only in town a couple times a year, including one of my very good friends, and it is also fun to meet new people. we added a new division to our company a couple years ago and they are constantly adding more reps; with the new reps there is sometimes some animosity about the way things are done, but it seems like after we meet in person, they always seem a lot more friendly. maybe it is because i have the ability to control minds with my demonic death ray/laser beam/controlling eyes. in fact, i will demonstrate now– stare intently at the picture below, and you just may find yourself making these cookies tonight:

in any case, the cookies were delicious and got lots of compliments! and apparently word has gotten out to the other offices and manufacturers, so once the weather cools off (if it ever does…UGH), it looks like i will have some shipments to make! maybe i will target one region at a time and ship them cookies along with an initiative…yes, i think i shall! nothing like food to motivate!

Recipe:

1 stick butter (softened)

2 cups flour

3 cups old fashioned oats

2 eggs

1 cup sugar

1 cup packed brown sugar

1 tsp vanilla

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1/2 cup craisins

1/2 cup raisins

5 oz chocolate chips (milk, semi-sweet, dark, or white)

5 oz cinnamon chips or 1tbsp ground cinnamon

1/2 cup chopped walnuts, pecans, peanuts, etc

preheat oven to 350 and line a baking sheet with parchment papercombine flour, baking soda, baking powder, and salt in medium bowlin large bowl, cream butter, eggs, both sugars, and vanilla until light and fuffy. stir in the flour mixture with a rubber spatula until well mixed.add in oats, craisins, and white chocolate chipsuse medium cookie scoop to drop cookies on to lined baking sheet.bake approx 12 minutes, until golden but still moist. let the cookies cool for about 5 minutes on baking sheet before transferring to cooling rack.
